Day 2: 30 Day Green Smoothie Challenge

Yesterday I posted about my first attempt at the 30-Day Green Smoothie Challenge. The goal of this challenge is to drink at least one (or two) green smoothie(s) a day— as a meal replacement, a snack or dessert. Yesterday, (even without a blender) I tried Skinnytaste’s Green Tropical Smoothie.

Today, even after spending all day at my son’s 9th Birthday party at the ice rink, I made time to blend some ingredients that I had on hand. Thanks to my sis who lent me her blender! She brought it with her to the ice rink today! Yippee! Now I can really give this challenge a shot!

Skinny Green Monster Smoothie

Servings: 1 • Serving Size: about 2 cups • Old Points: 5 pts • Points+: 6 pts
Calories: 253.4 • Fat: 4.0 g • Carb: 38.6 g • Fiber: 5.5 g • Protein: 17.5 g • Sugar: 18.4 g • Sodium: 236.7 mg 

Ingredients:

  • 1 small frozen ripe banana, peeled* (see below)
  • 2 cups baby spinach
  • 1 tbsp Better n Peanut Butter (I used chucky peanut butter. I don’t have this alternative)
  • 3/4 cup unsweetened vanilla almond milk
  • 1/2 cup plain fat-free Greek yogurt (I used 5.3 oz of Chobani, vanilla)

Directions: Place all the ingredients into the blender, add ice (optional) and blend until smooth.

Okay, this has to be one of the most embarrassing things that I will ever admit on any blog. Yesterday, I used a 1/4 of a banana for overnight oatmeal (which I didn’t eat this morning because the bananas looked nasty and brown) and I put the rest in the freezer. Yeah, I put the whole thing in the freezer … the banana with its peel still on. So tonight when I took the banana out of the freezer to use it for this “Monster Smoothie”, I couldn’t use it because I didn’t know that I shouldn’t have frozen the banana in its peel. Duh!! Luckily, my husband had the patience to “peel” it for me (yes, with a veg peeler).

Verdict: Awesome! It tastes like peanut butter and banana and it’s much smoother using the blender than yesterday’s smoothie that I used only using the food processor. I’m a believer now! 🙂 Tastes good and the nutritional benefits are in there, even if I don’t taste them! Woot!

  1. Aw don’t be embarrassed! I freeze overripe bananas peel-on all the time and use them in smoothies or thawed in banana bread! The peel comes off easily just by cutting it off too 🙂
